Mrs. Betty's Date Nut Roll


To know Mrs. Betty Covington is to love her. She is not only a delightful person, she is, also, a great cook. Recently, her daughter, Cindy, asked Mrs. Betty if she would make her Date Nut Roll for Christmas. Of course, Mrs. Betty said she sure would. I overheard their conversation and so Mrs. Betty demonstrated at Guess and Company Christmas at the Warehouse so we could enjoy one of her family favorite holiday foods.

I plan to make Mrs. Betty’s Date Nut Roll for my family over the holiday season and you can too.

Cooking Time: 1 ½ minutes
Total Time: 11 ½ minutes
Makes one 12-inch Date Nut Roll

Cooking Equipment

  • Saucepan
  • Mixing spoon
  • Spatula
  • Waxed paper
  • Plastic wrap

Mrs. Betty’s Date Nut Roll Ingredients

  • ¾ cups granulated sugar
  • 2 egg yolks
  • 1 cup dried dates, chopped
  • 1 stick butter (½ cup), melted
  • 1 cup pecans, finely chopped
  • 2 cups rice krispy cereal
  • 1 teaspoon vanilla extract
  • 1-2 cups of flaked coconut

Mrs. Betty’s Date Nut Roll Directions

  • In a saucepan over medium heat, stir constantly and bring to boil the sugar, egg yolks, dates, and butter.
  • No need to worry if the dates begin to partially dissolve.
  • Boil for 1 ½ minutes, stirring constantly.
  • Remove from heat.
  • Add pecans, rice krispies, and vanilla extract.
  • Stir until combined.
  • Pour out contents in the saucepan onto a large sheet of waxed paper.
  • Lay another layer of waxed paper over the mixture and shape into a 12-inch log.
  • Pour out 1 cup of flaked coconut onto the mixture and cover the log with the coconut. Add more if needed.
  • Let cool, then slice log into ½ to ¾ inch slices.
