Miss Carroll’s Walnut Thumbprint Cookies
MMy family likes a Hershey Kiss placed in the center of the Walnut Thumbprint Cookie and I like Lemon Curd. Both are delicious! Raspberry jam is, also, an awesome center stage for this cookie! Do all three and you decide!

Servings: Makes two dozen cookies
Cooking Equipment
- Mixing bowl
- Measuring Cups and Spoons
- Mixing spoon
- Mixer
- Baking sheet
- 1-tablespoon size spring-loaded scoop
- Parchment paper
Walnut Thumbprint Cookies Ingredients
- 2 sticks (1 cup total) butter at room temperature
- ⅔ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups plus 2 tablespoons all-purpose flour
- ¼ teaspoon fine salt
- 2 large egg whites, beaten
- 1 cup finely chopped walnuts
- ⅓ cup lemon curd
- One dozen Hershey Kisses
- ⅓ cup raspberry jam
Walnut Thumbprint Cookies Directions
- Preheat the oven to 350 degrees F. Line a baking pan with parchment paper.
- In a large bowl, using a mixer, blend together the butter, sugar, and vanilla on medium speed until light and fluffy, scraping down the sides of the bowl.
- Add the flour mixture and beat until just combined. The mixture will be somewhat powdery but clumps together between your fingers.
- Using a 1-tablespoon spring-loaded scoop, shape the dough into balls.
- Dip each ball into the beaten egg whites, then roll in the finely chopped walnuts. Press the walnuts to adhere to the dough.
- Place on prepared baking sheets, spacing about 2-inches apart.
- Bake for 12-15 minutes, until cookies are puffy and lightly browned.
- Remove cookies from the oven. Using the back of a spoon or your thumb, make an indentation in the center of each cookie.
- Fill with about 1 teaspoon of lemon curd or raspberry jam or a Hershey chocolate Kiss.
- Allow cookies to cool if you can wait that long!
