Miss Carroll’s French Cinnamon-Sugar Donut Bites made with Stonewall Kitchen Pancake Mix

Miss Carroll’s French Donut Bites are made using Stonewall Kitchen Pancake Mix. They have all of the flavor of an old-fashioned doughnut with the ease of simply making donut bites. Melts in your mouth, perfect on their own or with hot chocolate or coffee.

Great early morning breakfast, easy and delicious. They are best served warm right out of the oven.

Baking Time: 10-12 minutes
Total Time: 22 minutes
Servings: Makes 24 donut bites

French Donut Bites with Pancake Mix Ingredients

  • 2 1/2 cups Stonewall Kitchen Pancake and Waffle Mix from Guess and Company
  • ½ cup brown sugar (packed)
  • ½ cup milk (I used lactose-free whole milk)
  • 2 eggs
  • ¼ cup canola oil
  • 1 teaspoon vanilla extract
  • ¼ cup whole-fat sour cream1 
  • ½ teaspoon Saigon cinnamon
  • ¼ teaspoon ground nutmeg
  • 6 tablespoons butter, melted
  • ½ cup granulated sugar
  • 1 ½ tablespoon ground cinnamon

French Donut Bites with Pancake Mix Directions

  • Preheat oven to 350°.
  • Using either a mini-muffin pan or a donut hole pan, spray with Baker’s Joy.
  • In a medium bowl mix the Stonewall Kitchen pancake mix, brown sugar, milk, eggs, oil, vanilla extract, cinnamon, and nutmeg together with a spoon. Stir gently to avoid toughening the mix. It is okay if some of the mix is not smooth.
  • Drop by tablespoon into each of the mini-muffin or donut hole pan. Do not overfill.
  • Bake for 10-12 minutes.
  • While baking, melt the butter in a bowl.
  • In a separate bowl, mix the sugar and cinnamon.
  • Donut bites will be nicely golden brown.
  • As soon as the donut bites are out of the oven, roll in the butter. Then, roll in the cinnamon sugar mixture.
  • Serve warm.
