Miss Carroll’s Foldover Yeast Rolls


Miss Carroll has baked these Foldover Yeast Rolls for more than 45 years with 100% success. The dough mixing uses one bowl with simple ingredients. Once baked, the rolls are light, flaky and buttery.

They are best served warm right out of the oven.

Prep Time: 10 minutes
Baking Time: 12-15 minutes
Rising Time: 1 ¾ hours
Total Time: 2 Hours
Servings: Makes 18-24 rolls

  • Spoon
  • Biscuit cutter
  • Sheet pan
  • Parchment paper

Foldover Yeast Rolls Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 ½ tablespoons sugar
  • 1 packet of yeast
  • ½ cup Crisco shortening
  • 1 egg
  • ½ cup warm water

Foldover Yeast Rolls Directions

  • Mix all ingredients together until well-combined.
  • Cover bowl with a kitchen towel and let rise for about 1 ½ hours or until doubled in size.
  • On a floured surface, roll or pat out dough to about ¾ inch thickness.
  • Spread about 4 tablespoons of melted butter over the surface.
  • Using a biscuit cutter, cut the dough in rounds and fold in half. 
  • Place on baking sheet about 1 inch apart.
  • Let rise for about 20 minutes.
  • Preheat oven to 400 degrees F.
  • Bake for 12-15 minutes or lightly golden.
  • Brush melted butter over tops of baked rolls. 
  • Serve warm.
